Steamed Haddock

This particular low fat meal is great because you can vary the fish to suit your taste. If you fancy a change, substitute the fish for any other fresh white fish.

It's also OK to either grill or steam the fish when you are preparing it to suit your taste (no frying though!).

In this recipe we will be grilling the fish. Another option for this meal is to use either polenta or quinoa instead of the cous cous. Let's look at how it is done, and see below for the ingredients list that you will need. The recipe is based on two persons.

Cooking Low Fat Fish


The dressing is made by mixing the spice powder, lemon juice and coriander in a small bowl.

Cook the cous cous as per the instructions on the packet. When cooked, transfer the cous cous to a mixing bowl and stir in the pepper and sweetcorn.

Meanwhile, grill the fish until it is cooked. (Use a medium heat so the fish does not dry out).

Drizzle the dressing over the freshly made cous cous salad, and serve on a plate with the grilled fish. Add a little salt and pepper to taste.

Low Fat Recipe Ingredients Required


400g haddock (or the fish of your choice)
200g cous cous
150g sweetcorn (tinned, drained)
150g capsicum (de-seeded, sliced)
100g mushrooms (sliced)

Dressing
1 tsp Chinese 5 spice powder
2 dsp freshly squeezed lemon juice
2 tbsp fresh coriander (finely chopped)
